Meatless Monday Red Lentil Soup

2 tbsp extra virgin olive oil
1 white onion, chopped
8 carrots, peeled and diced
2 celery stalks, diced
5 cloves garlic, chopped
12 cups vegetable broth
2 cups red lentils
1 large bunch cilantro, chopped

At the bottom of soup pot, sauté chopped onion in olive oil. Add diced carrots, chopped celery, and garlic. Cook for 5 minutes to soften, stirring regularly. Add vegetable broth and red lentils. Cook on medium heat for 10 minutes, and add chopped cilantro. Cover and simmer on low heat for approximately 15 minutes, or until lentils and vegetables are soft, stirring occasionally. Season with Himalayan Sea Salt and fresh cracked pepper to taste. Garnish with cilantro. Serves 8, or leaves leftovers to enjoy later!
