Life Juice’sĀ Edamame Tahini Dip

12 ounces frozen shelled edamame
3 cloves garlic, minced
1/2 cup tahini
1/2 cup water
1/3 cup packed cilantro, chopped
1/4 cup lemon juice
3 tbsp extra virgin olive oil
3 tsp Pink Himalayan Sea Salt
1 tsp ground cumin

In a large pot cover edamame with salted water, using 1 teaspoon Pink Himalayan Sea Salt. Over medium heat simmer for five minutes or until soft. Drain. In a separate bowl or food processor, blend cooked edamame, water, tahini, chopped cilantro, lemon juice, olive oil, 2 teaspoons Pink Himalayan Sea Salt, and cumin until creamy. Garnish with cilantro and sprinkled ground cumin. Serve on a platter with assorted vegetables for dipping. Serves 8, keeps in fridge for as long as a week – great make ahead recipe for parties, or as a simple snack!
