Life Juice’s Baked Falafel
1 can (15-16 ounces) chickpeas, rinsed and drained
1/2 white onion (medium), chopped
3 medium cloves of garlic, minced
1 cup fresh flat-leaf parsley leaves
1 cup fresh cilantro leaves
1 1/2 tbsp lemon juice
1 1/2 tbsp tahini
1/4 tsp cumin
1/8 tsp cayenne pepper
1/4 tsp chili powder
pinch of himalayan sea salt
4 tbsp oat flour
Pre-heat oven to 350
Blend chickpeas, onion, garlic, parsley, cilantro, lemon juice, tahini, cumin, cayenne, chili powder, and himalayan sea salt in a food processor until well combined.
In a large mixing bowl add flour in small amounts to mixture.
Roll tablespoon of mixture between palms, lightly press down to flatten.
Lightly coat baking sheet with olive oil.
Place molded falafels on baking sheet
Bake for about 15 minutes, turning falafels halfway through (re apply olive oil)
Enjoy with tahini sauce, taziki sauce, or hummus!
