Life Juice’s Miso Glazed Eggplant


Extra virgin olive oil

Preheat oven to 350*. Prepare baking sheet with parchment paper. Slice eggplant into half inch thick sections. Brush olive oil on both sides of eggplant sections, place on parchment paper. Bake eggplant for 30 minutes. Prepare miso glaze while eggplant is cooking.

Miso Glaze
4tbsp miso
3tbsp raw honey or maple syrup
2tbsp hot water
2tsp rice wine vinegar
1tsp sesame oil

Combine and mix thoroughly, once cooked remove eggplant from oven and brush with miso glaze. Sprinkle with chopped cilantro and scallion, return to oven to broil for 5 minutes or until lightly browned. Serve and enjoy!
