several lemons, squeezed
cracked black pepper
1c plain greek yogurt
Remove tip of the artichoke, approximately 1 inch
Cut the top of the artichoke leaves and any thorns
Rub with lemon to keep from browning
Fill large pot with water (about 3 inches or just enough to hit the bottom of the steam basket)
Place artichokes upside down in steam basket
Over high heat, cover and bring water to boil
Reduce to simmer and cook for 30-40 minutes, or until the outer leaves can be easily pulled off
Herbed dipping sauce
1 cup of plain greek yogurt
1/2 fresh lemon, squeezed
1/2 tsp lemon zest
1 1/2 tsp olive oil
1 garlic clove, minced
1 tsp dried thyme
Pink Himalayan sea salt, to taste
Cracked black pepper, to taste
Fresh parsley, pinch, chopped
Mix all ingredients
Eat and Enjoy!
Pluck artichoke leaves and dip them into herbed sauce.
